This might be very easy, but I have no idea how to do it: is there a way to
change the value of a field on all records (or a filtered view of course) at
once ? Ideally I could replace one field with data of another or fill a
certain field with an incremental value, but simply replacing all field with
a certain value would already be nice.
Any suggestions ?

1) To replace all fields with a certain value, do the Advanced Find
(or a view) to select your records, and then select "Actions /
Edit" (may be More Actions, I can never remember). That will give you
a data entry form for that entity, and you can enter any valid value
in any field (or more than one field), and CRM will update all
selected records with the values you enter. (I would first try this
out with two records, so you see how it works...)
2) To replace one field with data of another your best bet would be a
workflow. Set it up as a manual workflow, and then set properties for
an update step, and go the field you want to update, and go to the
Form Assistant on the right hand side of the form and select the field
value you want to move into the field you want to update. It should
show the source field name in yellow on the target field. Save, and
don't forget to activate the workflow. Then, go to your view, and I
would select one record first, to make sure your workflow is doing
what you expect, and click on "More Actions /Run Workflow", or click
on the Workflow button... Then, you can select all records and
execute that manual workflow.
3) Filling a field with an incremental value is trickier. Your best
bet may be to export all fields from the records you want to change to
Excel, create the incremental value there, and re-import. (If you
selected all fields for the export, it should give you the "update"
option when you select the Tools/Import menu). You could
alternatively write an SSIS script to update CRM data, or write a .Net
program to do it. Both of those options require .Net scripting.
